This varietal, originally cultivated in Bordeaux, is considered the most renowned in the world for high quality and long lasting wines. In Italy its production is limited, finding its best expression in the north eastern region “Friuli Venezia Giulia”.
Production area: Alpi Carniche in the high Grave Friulana.
Soil composition: loose and well aired soil mainly composed of characteristic calcareous, white river stones, the result of flooding by the Meduna torrent.
Growing system: guyot, with rigorous winter pruning and precise intervention on the vegetation to keep production under control. Integrated pest and soil management respecting the environment.
Harvest: around mid October.
Vinification: in stainless steel tanks with maceration on the skins. Frequent reassembly during the fermentation process. It matures in steel tanks where the maturation takes place.
Sensory profile: bright ruby red in color, tending to garnet after ageing. Fruity and slightly spicy bouquet with a hint of ripe red fruit. It is smooth and warm on the palate, where you can find the same fruit and spices you perceived on the nose.
Food pairings: cold cuts, roast or grilled meat and game, aged cheese.
Service temperature: 18°C.
