Product Details: Valpolicella Ripasso is a red wine produced in the Veneto region of Italy, specifically in the Valpolicella DOC zone. The wine is made by taking the young Valpolicella wine and passing it over the lees (the grape solids that settle at the bottom of the fermentation tank) and skins left over from the production of Amarone, a highly concentrated and powerful wine made from dried grapes. This process is known as "ripasso" or "re-passing" and it gives the wine more body, depth, and complexity.
Valpolicella Ripasso typically has a ruby-red color and aromas of ripe cherries, blackberries, and plums, along with spicy and floral notes. On the palate, it is full-bodied and well-structured, with moderate acidity and tannins, and a long finish. The wine pairs well with a wide variety of foods, including grilled meats, pasta dishes, and aged cheeses. It can be enjoyed young, but also has the potential to age and develop more complexity over time
